What’s For Dinner: Turkey & Spinach Stuffed Pasta Shells

With a picky little one, dinner time can become a real struggle. We have had many meals of trial and error and over the years, I have learned some great ways to prepare meals she loves, that are moderately healthy, and are quick to make. I say moderately healthy because I do not have a green thumb child – I just purchased a Nutribullet with hopes that I can get her to take in more veggies. Anyhow, this meal has a good enough amount of spinach so, happy baby, happy mommy. Another aspect of making this meal that I like is that she can help me cook it. It’s pretty simple so having her mix the ingredients to cause too much of a mess. So, take a look at our recipe below. Turkey & Spinach Stuffed Pasta Shells

Quick and easy stuffed pasta shells served with marinara sauce.

Ingredients
  1. 1 bag large pasta shells
  2. 1 pound stuffed turkey
  3. 1 half chopped onion
  4. 2 cloves chopped garlic
  5. 1/3 cup Ricotta cheese
  6. 1/2 cup of spinach (fresh or thawed)
  7. 1/2 teaspoon paprika
  8. Sprinkle salt & pepper
  9. 1/2 tablespoon oregeno
Instructions
  1. Preheat oven to 350 degrees.
  2. While oven is warming, take 16 large pasta shells and boil them as instructed.
  3. Brown your ground turkey (you can also use ground beef) and season with paprika, salt, and pepper.
  4. Chop onions and garlic and set aside.
  5. Once turkey is cooked, combine in a large bowl with onions and garlic. Mix in ricotta cheese and spinach, then blend together.
  6. On a baking sheet, spread out pasta shells once they are done cooking and using a spoon, add a dollop of your turkey and spinach mixture.
  7. Top with a drizzle of marinara sauce and pop in the oven.
  8. Cook pasta shells for 20-25 minutes.
  9. Enjoy!
Optional
  1. You can either add the marinara sauce to the bottom of your pan and place shells on top, then add additional marinara sauce on top of the shells or you can use the marinara as a dipping sauce. Completely up to you!
