Dinner time around our home can sometimes be a very strenuous activity. Trying to find a meal that is healthy, tasty, and light on dairy can really limit our options. My daughter, like most African American children, is lactose intolerant and while she can have some food options that include dairy, I try to steer clear from it when I can. According to the National Digestive Information Clearinghouse, up to 75% of African Americans are lactose intolerant. Lactose Intolerance means that a person has a hard time digesting lactose, which is a natural sugar found in milk and dairy products. I made the switch to almond milk well before my daughter was born and we try to make our own ice cream instead of purchasing dairy based ice cream from the store. Quick tip on making your own ice cream: Blend almond milk and frozen fruit, add a little honey as a natural sweetener and you are done!
As a mama who loves pasta, this meal is a go to in my house when I am really having a craving for a hearty dish. This meal has a lot of options, including chicken, added veggies like spinach, and thick cut Parmesan cheese if you absolutely must have it! Coconut Milk “Alfredo” Pasta
2 cups linguine pasta
1 16 ounce can coconut milk
1 tablespoon almond milk
2 tablespoons flour
seasonings optional: cumin, oregano, coriander, salt & pepper to taste
2 tablespoons olive oil
1/2 sliced green pepper
3 minced garlic cloves
4 chicken breast (optional)
To Make The Sauce:
Empty coconut milk in a skillet over medium heat.
Mix almond milk and flour into a smooth consistency and set aside.
Pour almond milk and flour combination into coconut milk and cook reduce heat to low.
Mix until sauce starts to bubble and thicken
Add seasonings, green pepper, and garlic cloves.
Cook linguine as instructed.
Cook chicken breast on stove top or in oven. Dice and add to pasta
