Tuna Lettuce Bowl

Being a healthy mom is hard work. I wouldn’t consider myself a “crunchy” mama but I would like to believe that I at least attempt it. One of my favorite go to quick snack are Tuna Lettuce Wraps. They are bright, colorful, and even if your kids do not eat the lettuce, throw in a few crackers and let them eat the tuna on the inside. Here’s what you will need:

Ingredients
  1. 1 9oz can tuna
  2. Handful of grapes
  3. 1/3 cup diced red pepper
  4. 1/3 cup diced green pepper
  5. 1/3 cup diced yellow pepper
  6. 1/3 cup diced sweet onion
  7. 3 diced celery stalks
  8. 1/2 diced red apple
  9. 1 boiled egg
  10. 1 diced chicken breast (optional)
  11. Iceberg lettuce
  12. Salt & Pepper to taste
Instructions
  1. Start by boiling your egg in medium water for 10 minutes.
  2. While egg is boiling, mix all of your ingredients in a bowl.
  3. Once egg is done boiling, allow it to cool for 10 minutes, then dice and add in mixture.
  4. Add salt and pepper to taste.
  5. Peel iceberg lettuce until you have one bowl shaped leaf
  6. Scoop ingredients into leaf.
  7. Serve immediately
